SUPERDELICIOUS Protein Apple Pie :)

Again, proteinpow.com was the source of inspiration :) I was looking for some delicious pie recipe, found THIS ONE but then realized, that hey, I really want to do an apple pie. So I did the crust from Proteinpow's Blackberry Protein Fluff Pie (which I definitely need to try sometimes!) recipe (although I changed it a bit) and then - the filling - I just mixed some stuff from my fridge and I'm telling you, it was the best combination ever!!! And I'm going to share it with you now :)

PROTEIN APPLE PIE

The crust:
100 g buckwheat flakes
18 g coconut oil
4 eggwhites
4 tbsp coconut milk
approx 20 drops of English Toffee liquid stevia

I blended these ingredients together, put it into a pie mold and baked in 160 degrees Celcius for 15 mins.

Meanwhile I prepared the filling:
100 g ricotta cheese
50 g Fage Total 0% Greek yogurt
1 tsp erythritol
I mixed these with a spoon in a bowl and then added coconut milk until the consistency was nice (12 tbsp).
Then I chopped 1/3 of Cinnamon Roll Questbar & 1/3 of Apple Pie Questbar and threw it in :)
Chopped Questbars and sliced apple

First I placed 1,5 dl of unsweetened apple puree on top of the crust and then the actual yummy-filling. I sliced one Ida Red apple on the top of the pie and finally, some organic ground cinnamon and hazelnut... Omnomnom :) I baked it in 160 degrees Celcius for approx 30 mins.

I accidentally (I SWEAR, it WAS an accident!!! :D) licked my finger while doing the crust and OH MY GOD it was a heaven on earth!!!!! When I'm done with this diet I'm going to do that crust and eat it without baking, it was just perfect, I almost collapsed... :D When I baked it, it went very hard but after being in the fridge for a while the pie was pretty close to perfection. The filling was a huge success, I wouldn't change anything (my boyfriend praised it so much!). Well maybe, if I wanted a lighter edition, I could place the ricotta with some unflavored fat-free cream cheese... And using almond milk instead of the coconut milk might also work. I have to try it, maybe next week ;)... This apple pie served with some protein ice cream and/or protein fluff (Proteinpow's intelligent innovation) would totally blow my mind. And body. Looking forward to it ;)

Rocky Road Protein Muffins

I've had this obsession for making some kind of rocky road protein muffins or brownies for a while now. When I saw Anna's recipe (click HERE for the recipe) on proteinpow.com I had to try it! I had to change it a bit 'cause I just can't find any pumpkin puree 'cause it's not that familiar in Finland... and yes, I did some other changes, too. But here's my version of the muffins :)

ROCKY ROAD PROTEIN MUFFINS

0,5 dl unsweetened apple puree
1 small Royal Gala apple
1,25 dl Fage Total 0% Greek yogurt
1,25 dl chocolate + mint chocolate whey (about half and half...)
5 egg whites
1/2 tbsp coconut flour
1 tsp baking powder
1/2 tbsp Clipper organic drinking chocolate
 0,3 dl wheatbran
15 g cocoa nibs
30 g gojiberries
1 small piece of liquorice & 1 small marshmallow per muffin

Blend the first nine ingredients well, the batter is pretty fluid. Then add the cocoa nibs and goji berries. Slice one piece of liquorice into small pieces, put that and one small marshmallow in a baking cup with the batter. I got twelve muffins in all. I used organic liquorice. I know that the marshmallow isn't any good for you, but hey - 12 small pieces of marshmallow weighted 5 grams. So it's like nothing.

I'm telling you - these were a huuuge success!!! My boyfriend totally loved these! I put some of it into the freezer so that I could taste it myself next week :) I got some Rocky Road Whey Protein Isolate from Fitnessguru just yesterday, it means that I have to do some more Rocky Road muffins ;) But in the meanwhile, I'll do some protein apple pie with some Fitnessguru caseins that I also received yesterday. Yummyyy!

Taste Awards

My first baking session was pretty successful. I've baked years ago and it was all about sugar, butter and wheatflour... But I've done it just a few times in my life. This healthy baking is so much more fun! Since I'm on a diet (one more week to my figure contest...) I can't taste my pastries, so my boyfriend did that job. Before showing you my latest accomplishments as a CleanEatingMasterChef (:D) I'll give you the Taste Awards concerning my previous baked goods :)

So this was his first portion :D Think he started with the cheesecake. At first he thought it should be a bit sweeter, but later (when he had eaten a couple of these) he said it's delicious in the way it is. Golden berries, raspberries and cloudberries were a great combination.

Blueberry vanilla protein muffins were a bit too dry on the top. The blueberries were on the bottom of the muffins so it was more moist, I think I'll try this with some banana or dates or something like that... But still, it was pretty good and he ate it all :D

Then the dark chocolate protein digestives with chickpeas & chiaseeds. My boyfriend isn't used to eating DARK chocolate so it took some time that he was able to say anything about these cookies. He said it could be a bit sweeter (maybe more stevia next time) but after all he thought that these cookies are pretty good, too. And he has been eating these so I think it wasn't a lie :D

My chocolate banana & strawberry peanut butter protein pie - what a SUCCESS!!! It was so moist and yummy and he was so excited about it! Strawberries were a perfect choice for this pie :) I can't wait that I get to taste this, but it's going to stay in my freezer for one more week...

And last but definitely NOT least - the almond, fruit & berry protein cake. Mm-mm-mmmm... You should have seen his face. This cake was perrrrfect! Just look at it. I was a little afraid if it were too dry, but no. The filling and the perfect crusting did the trick and the result was excellent. This cake dissapeared in no time (and so did the other pastries).

My next post will be about ROCKY ROAD PROTEIN MUFFINS - so excited about this one!!!

Delicious & healthy dietfood

A few tips how to make good, healthy and quick meals :) I'm not a good chef but lately I've started to use vegetables and spices a lot more and I enjoy my meals more than ever. And I'm on a diet! I don't usually have a lot of time to cook so mealplanning is very important, even when I'm not on a diet. I always carry my own meals with me, I've done that for years so it's "the normal way" for me.

When it comes to making omelettes and pancakes, I suck. I have no idea how to flip them properly. Usually I do just scrambled eggs with chicken/fish/turkey and vegetables.Yesterday I made a move and stopped trying. I just cooked my omelette without flipping and OMG - it was so good. I don't know why I've been so obsessed with that flipping thing :D

My breakfast from yesterday :)

3 eggwhites, 50 g tuna and some vegetables and spices made 1 big and 1 small omelette :)
Evening meal - mmmm it was gooood :)
I like to use a lot of vegetables in my omelettes. Onions, tomatoes, broccoli, pepper, garlic, ANYTHING! Omelette is a quick option and you get a lots of protein from it :) Usually I like to use one yolk, too but now I can't. I cook omelettes in the oven, too. Here's some examples.

Today I had a very busy morning so I did my breakfast yesterday. These egg muffins included 3 eggwhites, 50 g of tuna, 20 g of buckwheat flakes, broccoli, tomato, onion, garlic and some spices.

This is soooo good! Just mix the ingredients, put into the tray and bake in the oven. Right now I use 3 eggwhites and 50 g of chicken, turkey, shrimps or tuna per portion (plus lots of vegetables). You can do this or the muffins in bulk, so there you have a quick and tasty snack when you're busy and don't have time to cook.

Usually I cook a lot of chicken or meat at once, put it in portions and freeze some of it. That way I don't have to use so much time for cooking everyday.

1 kg of chicken cooked with a little bit of sriracha sauce, sundried tomatoes (in salt, NOT in oil!), garlic, onion, spices (Herbamare, onion powder, paprika powder, garlic powder and basil) and mung beans.

I eat this chicken with salad, put it in omelettes, tomato-based light sauces, woks...

Lunch from yesterday: fresh salad, one sundried tomato, chicken, dash of balsamic vinegar, 1 tsp of walnut oil.
Today I did some extraordinary delicious foooood!!! :) And it was quick&easy&healthy.

I haven't eaten pasta for a while, I've replaced it with quinoa, couscous and rice. I think avoiding glutein is a good option but I'm not going to change for totally glutein-free food. A little organic wholegrain pasta every now and then is OK for me (and the crisp bread, mmm...) :) So, I ate my chicken-tomato sauce with 20 grams of pasta. I'll give you the recipe for this sauce 'cause I think it was a success ;)

CHICKEN-TOMATO SAUCE
(1 serving)

100 g chicken
~200 g organic tomato sauce (in a can)
~50 g mushroom (in a can, going to try with fresh ones...)
sundried tomato (in salt)
1 organic onion
3 cloves of organic garlic
a small handful of mungbeans
spices: Herbamare, smoked paprika, ground nutmeg, parsley, ground turmeric

Sauté the onion and garlic on a pan, add everything else and that's it :D I covered it for a while and stirred every now and then. When the food was on my plate, I grated some walnut on top of it. Mmmm... So good :)

Just a moment ago I ate a pretty similar meal without pasta, added in some capsicum and broccoli... Yummyyy :)

Tastes as good without pasta :)

So I think that's about it for now. I've done some baking and raw chocolate lately, so more posts are coming soon :) I also got some new protein powders from Fitnessguru today and some other stuff that I'm going to introduce. Soooo much recipes that I'm goin to try with those new proteins... :)

My Food Diary

I'm going to participate in bodyfitness(=figure) contest 13th of April. So it's like next week. OMG. I've had some serious problems with my legs for the last two weeks and I'm so frustrated that I haven't been able to train properly.. I would have wanted to train insane for these last weeks. Now it just doesn't happen. And it sucks. Anyway, I'll show you what I eat when I have a "good day" and I can eat carbs :D Normally I eat a lot more carbs of course!!!

Breakfast was oatmeal with eggwhites and protein powder. If you haven't tried, you should. Normally I have eaten my oatmel with cottage cheese and berries, but now I can't (because my diet is in that point, I can't eat dairy products/berries/fruits, normally I do!!!). My oatmel includes 20 g oats, 2-3 eggwhites (just mix well with the oatmel in the pan) and some whey protein powder. I've tried raspberry-vanilla whey + mint chocolate whey, pear vanilla whey and chocolate whey and they're all good. I always add some cinnamon, too :) Usually, when I'm not heading to a contest, I eat 50 g oats and a lot of berries and fruit... I'm looking forward topping my protein oatmel with some banana, blueberries, peanut butter... Only sky is the limit! :)

For lunch I had this... what should I call it :D I made some "tunaloaf" the other day (including tuna, cauliflower, onion, tomato, spices) so I just mixed it with cooked spinach, green beans and organic quinoa. Served with sauerkraut, tomato and salad. Sauerkraut includes probiotics and it's good for your digestion, so you should eat it FIRST.

This doesn't look special but I just love organic crispbread with eggwhites, turkey/ham/chicken and vegetables. Make sure that if you eat cold cuts (I know it's not the best choice) they must not include monosodium glutamate and find the ones with at least 90% meat!

Dinner was just some fresh salad, couscous (organic and wholegrain) and chicken breast with a dash of organic extra virgin olive oil and vinegar.

Evening meal was made of onion, tomato, garlic, turkey, eggwhites, two pecan nuts and some spices. Served with some fresh salad and a dash of vinegar.

After workout I drank some Self Omninutrition whey protein isolate and glutamine. Usually I take some creatine too and eat a banana.

I'm going to make more of these food diaries as soon as my diet ends and I can try new recipes and play a lot more with fooood :)

Almond, Fruit & Berry Protein Cake

Again I was searching for some yummy recipes from proteinpow.com and found THIS one. It's easy and I had ALMOST all the ingredients, so I decided to improvise... and the result was this:

TADAAAA!!!! Isn't it beautiful!!?? Here's the recipe:

ALMOND, FRUIT & BERRY PROTEIN CAKE

250 g quark, yogurt and cottage cheese mixed (don't know how much each, just put some...)
1,5 dl pear vanilla whey protein
2 eggwhites
0,5 dl applesauce (just apples, no sugar or anything else added!)
1,5 dl oats
3 tbsp coconut flour
1 tbsp banana powder
1 tablespoon cinnamon

Mix the ingredients above and bake: 160 degrees celsius approx 30 mins.

Filling:
raw almond butter
1 scoop mint chocolate whey protein mixed with coconut cream, 3-4 drops of English Toffee liquid stevi and a dash of xanthan
applesauce
coconut flakes

Topping:
1 scoop mint chocolate whey protein mixed with coconut cream, a handful of frozen blueberries, 5-6 drops of English Toffee liquid stevia and approx 1 tsp of xanthan.

I decorated the cake with few blueberries and pecans.

This is how the batter looked like when I had mixed the ingredients with a spoon.
Because I used cottage cheese, there were "clumbs" so I used a handmixer...
At this point I was thinking: "Oh F**K!!!"

Then I allowed it to cool and sliced it. And then the fillings... First some raw almond butter.
And then some applesauce, wheyprotein filling and coconut.

This was my greatest idea ever! I know that there's a lot of fat in coconut cream but there's not so much of it... I'm going to try this with Greek yogurt! This was like pudding :) I haven't used xanthan before but it was great!

This is how it looked like before decorating. Didn't have any pretty plates but I don't really care. The cake is so amazing.

And finally, few photos of my very first CleanEatingSuperProteinCake:

Vanilla protein muffins & cheesecakes :)

Now it's time to reveal the rest of my Saturday nights creations. My last post was sooo long that this time I'm going to keep it simple. So here you go, Protein Cheesecakes & Blueberry Vanilla Protein Muffins.

PROTEIN CHEESECAKES
click HERE for the original recipe by Protein pow

Here's what I put into my cheesecakes (there's no cheese in it, by the way :D)

170 g quark with yogurt
2 tbsp natural yogurt
1 tbsp coconut flour
1/4 cup golden berries
2 eggs
0,5 dl pear vanilla whey powder

I mixed these ingredients together in a bowl and then added 1 cup raspberries and cloudberries. I didn't have any fresh berries because it's WINTER and it sucks. But I have a lots of berries (that my MUM picked last summer) in my freezer so I didn't have to buy any. I also put some organic ground cinnamon on top of these cuties. 170 degrees celsius approx 35 mins. How simple was that!

Luckily I found these little molds, I have never used them... But now I did!  Looking pretty good, don't you think? I know that these pastries I did are not the cutest ones in the world, but forgive me, I'll focus on that later :D

BLUEBERRY VANILLA PROTEIN MUFFINS
Click HERE for the original recipe by Protein pow

I didn't do upside down muffins. I didn't even try. I will try it sometimes, but now I just focused on doing a muffin :D And it was so simple, the only problem (again) was that I don't have that muffin mould (yet) and using only the baking cups was a bit tricky. You can not put a lot of dough into the baking cup - and I realized it too late. But then I just put a couple of baking cups one on the other and my muffins survived.

Protein pow's recipe was so simple and perfect that I didn't improvise. Well I used pear vanilla protein instead of vanilla protein powder. I think it smells delicious!! Can't wait to stuck these into my mouth... :D

6 eggwhites
1,75 dl pear vanilla protein whey
1/2 cup buckwheat flour
2 tbsp coconut flour
1 tsp baking powder
65 g cottage cheese
a little more than 1 cup blueberries

Looks soooooo FREAKING DELICIOUS!!!

I already told you last time that I topped two of these with molted dark chocolate. I just set the chocolate on the top of the muffins with a spoon and then put it in a freezer for half an hour.

So here it was. My first touch with clean baking :) And it was goooood. Although I don't know does it taste good but at least it was fun :D And the macros of these things are ridiculoysly awesome. Plus it was easy. So I think you have to try it :)
